Harold And Belle Restaurant Jambalaya

Ingredients:
1/4 lb (1 Stick) butter or margarine
1 cup of chopped onion
1/2 cup chopped celery
1/4 cup chopped green bell pepper
1/4 cup chopped green onion
1 tbsp. minced garlic
1/4 tsp. black pepper
1/4 tsp. ground bay leaves
1 pinch crush red pepper
1 tsp. granulated onion
1 tbsp. chopped parsley
2 cups Creole sauce
2 cups diced and cooked chicken breast
2 cups diced beef smoke sausage
1 lb. Peeled and devein shrimp
8 cups of cooked rice

Procedures:
In a pan, sauté butter, chopped onion, celery, and green bell pepper.

Add garlic, black pepper, red pepper, and granulated onion.

Then add beef sausage, creole sauce, chicken, and shrimp.

Cook for 30 minutes, then add rice, parsley, and scallions.

Cook for 20 minutes and serve.

Chocolate Peanut Butter Cups

Ingredients:
1 cup semisweet chocolate chips
1/4 cup butter
1 tablespoon vegetable oil
1/4 cup peanut butter

Procedures:
Coat a small cup muffin tin with cooking spray. In a microwave-safe bowl, microwave chocolate with butter and oil, stirring often,until melted, 1 to 2 minutes. Pour about a tablespoon of the chocolate mixture into each muffin cup.

Melt peanut butter in microwave, 30 to 40 seconds. Spoon about 1 teaspoon of melted peanut butter over chocolate in each muffin cup. Top with another tablespoon of chocolate.

Chill in refrigerator 30 minutes, until set.

Makes 12 peanut butter cups.

Texas Roadhouse Rattlesnake Bites

Ingredients:
12 large jalapenos, seeded and cut in half
2 cups Monterey jack cheese, shredded
1 large egg
2 tablespoons milk
1 tablespoon flour
1 teaspoon Parmesan, grated
salt and pepper
1 1/2 cup bread crumbs, seasoned or unseasoned
vegetable oil

Procedures:
Wash jalapenos, cut in half, and take out seeds.

Stuff each half with grated jack cheese.

In shallow bowl, mix flour, egg, Parmesan, milk, salt, and pepper to taste.

Place breadcrumbs in flat dish.

Dip jalapeno in egg mixture and then in breadcrumbs.

Place in freezer for 1/2 hour.

Take out of freezer and deep fry in hot oil until golden brown.

Serve immediately with Ranch Dressing or Cajun Horseradish Sauce.

Serves: 6 person
